kale quinoa saladThis is my favorite salad that I have been making each week since the kale started growing in my garden. This recipe was inspired from Elizabeth Rider.It’s filling, super nutritious, and lasts a few days in the fridge. ┬áLunch or dinner made easy! ┬áThe salad is also delicious on its own if you don’t have any kale, and topped with avocado.

Black Bean Kale Quinoa Salad

Ingredients

    Salad
  • 2 cups cooked quinoa
  • 1 can of rinsed black beans
  • 3-5 leaves of kale ripped into small pieces
  • 1 red pepper chopped
  • 1 zucchini chopped
  • 1 red onion chopped
  • large handful of cilantro chopped
  • Dressing:
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1 1/2 tsp cumin
  • 2 garlic cloves crushed
  • Juice of 1 lime
  • 1/4 tsp cayenne (or more)
  • 1 tsp sea salt
