Black Bean Kale Quinoa Salad

kale quinoa saladThis is my favorite salad that I have been making each week since the kale started growing in my garden. This recipe was inspired from Elizabeth Rider.It’s filling, super nutritious, and lasts a few days in the fridge.  Lunch or dinner made easy!  The salad is also delicious on its own if you don’t have any kale, and topped with avocado.

Black Bean Kale Quinoa Salad

Ingredients

    Salad
  • 2 cups cooked quinoa
  • 1 can of rinsed black beans
  • 3-5 leaves of kale ripped into small pieces
  • 1 red pepper chopped
  • 1 zucchini chopped
  • 1 red onion chopped
  • large handful of cilantro chopped
  • Dressing:
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1 1/2 tsp cumin
  • 2 garlic cloves crushed
  • Juice of 1 lime
  • 1/4 tsp cayenne (or more)
  • 1 tsp sea salt
