This is my favorite salad that I have been making each week since the kale started growing in my garden. This recipe was inspired from Elizabeth Rider.It’s filling, super nutritious, and lasts a few days in the fridge. Â Lunch or dinner made easy! Â The salad is also delicious on its own if you don’t have any kale, and topped with avocado.
Black Bean Kale Quinoa Salad
Ingredients
- 2 cups cooked quinoa
- 1 can of rinsed black beans
- 3-5 leaves of kale ripped into small pieces
- 1 red pepper chopped
- 1 zucchini chopped
- 1 red onion chopped
- large handful of cilantro chopped
- 1/3 cup olive oil
- 1/3 cup balsamic vinegar
- 1 1/2 tsp cumin
- 2 garlic cloves crushed
- Juice of 1 lime
- 1/4 tsp cayenne (or more)
- 1 tsp sea salt
