a super quick and easy breakfast or snack on the go.  I love that these egg wraps are high in protein, nutrients, healthy fats and low in carbs. (which all too often our breakfasts and snacks are made of) You can pre-make several the day before so all you have to do is warm them up, but they are  just as delicious cold!

I’m pretty fortunate to have fresh eggs handy at any given time so when I can come with a recipe that involves eggs and other ingredients we’ve grown, all the better! One egg has about 70 calories, 13 essential vitamins and minerals (like Vitamin D), 6 grams of protein and healthy fats. I got this recipe idea from The Lean Green Bean, and added extra egg whites for added protein.

You can add any filling you like. I love adding avocado and tomato. Thin strips of chicken breast with hummus or salsa is also good 🙂

Easy Egg Wraps

Ingredients

  • eggs
  • egg whites
  • fillings
  • chicken, turkey, tomato, avocado, cheese, hummus, salsa
  • seasonings
  • salt, pepper, paprika, cayenne pepper, basil, oregano, etc

Instructions

  1. Heat a small skillet over medium heat and grease with butter or olive oil.
  2. Mix one egg with 1/3 cup egg whites.
  3. Pour into a hot pan and tilt pan to spread egg so it cover the bottom of the pan.
  4. Let cook 30 seconds. (Sprinkle with seasonings)
  5. Carefully flip with a large spatula and cook for another 30 seconds.
  6. Remove from pan and repeat for as many roll ups as desired.
  7. Let egg wraps cool, top as desired with fillings, roll and serve warm or cold.
