These are an awesome alternative to the traditional waffle that you won’t feel guilty eating! Top them off with some real maple syrup or a fruit spread and you have yourself a great weekend breakfast or do what I did and have them for your Friday night supper.
Protein Packed Gluten Free Waffles
- 2 1/2 cups oats
- 2 tsp baking powder
- 1 cup cottage cheese
- 4 eggs
- 1 cup of water
- 2 TBSP coconut flour
- 4 tsp coconut oil melted
- 2 tsp vanilla
- 1 tsp salt
- Process oatmeal until it is well blended into an "oat flour" in food processor.
- Add Baking powder and put aside.
- Blend remaining ingredients and add to dry mixture.
- Spray waffle iron with a non stick cooking spray.
- Makes around 8 waffles.
