Quinoa Cauliflower Rice Pilaf

IMG_4563Mild tasting and light, this makes an easy side dish that goes great with fish or chicken.  Quinoa contains all of the essential amino acids, 4 grams of protein and 3 grams of fiber in a 1/2 cup serving.
