Mild tasting and light, this makes an easy side dish that goes great with fish or chicken. Â Quinoa contains all of the essential amino acids, 4 grams of protein and 3 grams of fiber in a 1/2 cup serving.Â
Quinoa Cauliflower "Rice" Pilaf
Ingredients
- 1 head of cauliflower, cut into florets
- 1 TBSP coconut oil
- 1/2 cup diced red onion
- 1/2 cup diced carrot
- 1/2 cup frozen peas
- 1/2 cup cooked quinoa
- 2-3 minced garlic cloves
- 1 tsp tumeric
- 1 tsp cumin
- 1 TBSP broth or water
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/2 cup slivered, toasted almonds
Instructions
- Working in batches, pulse cauliflower in food processor until it resembles rice. Heat coconut oil in large skillet over medium heat. Add onion,garlic, and carrot and cook 4-5 minutes until onions are soft and carrots crisp-tender. Add cauliflower and spices, stirring to combine. Add peas, quinoa, broth, salt and pepper and cook 2 minutes until heated through. Top with slivered almonds. (My kids like some grated cheese of course!)
