Pumpkin Walnut Muffins

Ingredients

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/3 cup honey
  • 1/3 cup melted coconut oil
  • 1 1/2 cups whole wheat flour
  • 1/2 cup old fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp all spice or cinnamon
  • 1/2 cup walnuts
  • 1/2 cup chopped, peeled apple or dried cranberries (optional)

Instructions

  1. Pre-heat oven to 350'.
  2. In food processor or bowl blend together pumpkin puree, eggs, honey and melted coconut oil.
  3. Add flour, oats, baking powder, baking soda, salt, cinnamon, and walnuts.
  4. Stir just until blended.
  5. Divide into 12 lightly sprayed muffin cups or use liners.
  6. Bake for 20-25 minutes.
