It’s crazy this year how everything in my garden is coming early. Raspberries & kale galore right now.  I know how easy it is to get stuck making the same ol’ salads…so here is a new kale quinoa raspberry salad  to try, chock full of nutrition!Â
Raspberry Kale Quinoa Salad
Ingredients
- 2 cups of cooked quinoa
- 1 cup fresh raspberries
- 1/2 cup blueberries
- 1/2 cup slivered almonds
- 2 cups shredded kale
- 3/4 cup crumbled feta or goat cheese
- 1 diced avocado
- 1/2 cup olive oil
- 1 tsp lime zest
- 4 TBSP fresh lime juice
- 3 TBSP honey
- 1/4 tsp salt
- 2 tsp poppy seeds
- 1 tsp dijon mustard

Instructions
- In a large bowl combine quinoa, berries, kale, feta, almonds and avocado.
- Mix salad dressing and toss to fully coat.
