Raspberries & kale galore right now.  I know how easy it is to get stuck making the same ol’ salads…so here is a new kale quinoa raspberry salad  to try, chock full of nutrition! 

 

 

 

 

Raspberry Kale Quinoa Salad

Raspberry Kale Quinoa Salad

Ingredients

    Salad
  • 2 cups of cooked quinoa
  • 1 cup fresh raspberries
  • 1/2 cup blueberries
  • 1/2 cup slivered almonds
  • 2 cups shredded kale
  • 3/4 cup crumbled feta or goat cheese
  • 1 diced avocado
  • Dressing
  • 1/2 cup olive oil
  • 1 tsp lime zest
  • 4 TBSP fresh lime juice
  • 3 TBSP honey
  • 1/4 tsp salt
  • 2 tsp poppy seeds
  • 1 tsp dijon mustard

Instructions

  1. In a large bowl combine quinoa, berries, kale, feta, almonds and avocado.
  2. Mix salad dressing and toss to fully coat.
