Roasted Root Veggies


root-vegetablesA simple side dish that completes any meal.  Mix and match what ever your garden grows!
Due to their ability to absorb vitamins and minerals from the ground, root vegetables grown in rich soil are full of nutrients and are an excellent source of fiber. Many are high in vitamin C, B vitamins, and vitamin A. Many are antioxidants. Several have remarkable healing properties and health benefits.  The added coconut oil, which is a healthy fat, helps to increase the absorption of the antioxidants from the vegetables and gives a nice flavor.

Roasted Root Veggies


  • 2 medium sweet potatoes
  • 1 red onion
  • 1 rutabaga
  • 2 medium carrots
  • 2 turnips
  • 3 garlic cloves
  • 3 TBSP coconut oil
  • 2 tsp sea salt
  • pepper to taste


  1. Preheat oven to 375'.
  2. Cut up vegetables into bite size pieces.
  3. In a large roasting pan toss all ingredients.
  4. Roast for 45-60 minutes, or until vegetables are tender.
