Vegan Slow Cooker Pumpkin Chili
Ingredients
- ½ Tbsp olive oil
- 1 diced onion
- 4 cloves garlic
- 1 tsp cayenne
- 1 diced red bell pepper
- 1 TBSP cumin
- 1 TBSP coriander
- 1 TBSP turmeric
- 1 cup vegetable broth or water (add more if needed)
- 2 Tbsp tomato paste
- 2- 15oz cans pumpkin
- 2- 28oz cans diced tomatoes
- 4 Tbsp chili powder
- 1 15oz can kidney beans
- 1 15oz can black beans
- 1 cup corn (fresh or frozen)
- 1 cup chopped carrot
- 1 cup chopped celery
- 1 Tbsp brown sugar
- Salt and pepper, to taste
Instructions
- In a pot, sauté onions and garlic until onions are translucent, about 5-7 minutes.
- Add all ingredients into slow cooker and cook on low for 5-6 hours.
